Dr. Wang Hailin of R&D Center published a research paper entitled “Elucidating the interaction mechanism of rutin with β-casein and β- lactoglobulin: a comprehensive analysis using multi-spectroscopy, molecular docking, and molecular dynamic simulations” in Food Chemistry (Impact Factor: 8.5), the top international food journal. Dr. Wang is the first author of the paper, and Fujian Polytechnic Normal University is the first unit of completion of the research result.
